
2 cups unbleached organic flour (or more, depending on your starter and how wet the dough seems)
8 tablespoons cold Flat Rock Living raw grass-fed butter, cut into chunks
1 cup FRL organic unbleached sourdough starter
1 tablespoon sweetener (cane sugar, honey, syrup)
1/2 cup FRL raw grass-fed milk, buttermilk, or water
1 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt

Add flour to a large bowl.
Cut butter into chunks and add to flour.
Use a pastry cutter or your hands to form the butter and flour into a ball.
Add sourdough starter, sweetener, collagen and milk.
Stir until all is incorporated.
Add more flour if needed for a workable dough.
Place a clean towel or wrap over bowl and allow to ferment 8 - 12 hours (we usually just do overnight).
THE NEXT DAY, add baking soda, baking powder, and salt to fermented dough.
Mix together well, and then roll out dough onto lightly floured surface and cut biscuits with a round cutter.
Place into a fat-tened or oiled cast-iron pan or glass dish.
For added height, let rise for 30 minutes.
Bake at 400° for 14 - 20 minutes or until lightly golden.
Serve with butter, honey, cream cheese, or fruit, or with sauces or meats. Enjoy!
